This morning I made pancakes for breakfast. I haven’t had pancakes ever since I became a vegetarian. I heard that Bisquick is vegan, but I was really trying to stay away from the boxed stuff. So last night I looked up a recipe on Vegcooking and had Juan take me to Whole Foods so I could get what I needed. I pretty much had everything already. I ran out of soy milk and decided to get some bananas to mix into the batter. Well, as I was starting to make the batter Ethan came running over to me and says “No! I want waffles!” I told him I was making him banana pancakes instead. He gave me a funny look and walked away sulking. It took me maybe 15 minutes to make the batter and all of the pancakes. I sat Ethan down with his pancakes and started to clean up. He came running over to me with a surprised look on his face and said “Mommy, I like it!” Lol. I’m glad he did. I was a little worried there for a minute. Once he decides he wants something there’s usually no changing his mind. It was the bananas! He loves bananas.
Anyway, the point is… making pancakes from scratch is a lot easier than I thought it would be. I don’t know why I thought it would be so difficult, but it wasn’t. And they taste way better than any other pancakes I’ve ever had. I’ll never buy the boxed stuff again.
You can find the recipe that I used on Vegcooking. Search the recipes for pancakes and choose which one you want. I went with PETA’s pancakes. I added a little more soy milk than it called for and added a small banana. I bet blueberries would turn out great too.
Today I made veggie pizza for lunch and tofu scramble for lunch tomorrow. I don’t always cook in advance. I should though. It saves a lot of time and trouble. Anyway, on the pizza I put tomato sauce, garlic, onion, mushrooms, spinach and vegan cheese. The tofu scramble is a mix of tofu, pepper, parsley, oregano, nutritional yeast, onion, mushrooms and spinach. I’m thinking of ordering some Teese Cheese to use for the next pizza I make. I’ve heard lots of good things about it.

I got the recipe for this cake in The Joy Of Vegan Baking. It’s an awesome vegan cookbook. There are so many recipes that I want to try. I figured I’d start off with something a little more simple since I’m still new to the whole vegan baking thing. This is actually the second time I made this cake. The first time was yesterday. When I went to take the cake out of the pan it all fell apart and crumbled. I was pretty upset, but wasn’t about to give up. So I tried again today and got way better results. It was delicious. Juan loves it too. On a scale from 1-10 he gave it a 10. I can’t wait to try another recipe.
