Beach photos

There’s been quite a bit going on in my life these days. I guess you can say it’s an even mix of good and bad. We’ve been going out more which is definitely good. We have a vacation planned at the end of July. We’re going to New Hampshire for a few days to visit with my grandparents. Then we’ll probably spend a few days in Rhode Island so we can catch up with my family. I start school in September. I guess the only bad part is work. It sucks as always. But I’m learning to not care. The problem is that I used to care so much and it got to me. But I’m not letting it get to me anymore. It’s just not worth it. I guess the only other bad thing would be my second wisdom tooth which was extracted last week. It still hurts. I’m also taking antibiotics which make my stomach cramp up. So if my mouth isn’t hurting my stomach is. I really wasn’t expecting this one to hurt. The first one was just fine. I didn’t feel any pain at all. I wish I knew how much longer this pain is going to last. I don’t think I can take much more of it.

Anyway, here are a few pictures I took while at the beach last week. They’re not my best. However, they’re not that bad considering it was very cloudy and humid.

I can’t wait to take Jack (my camera) to Mexico in February. I’m going all out too. I’m going to hook myself up with some new lenses, filters, etc. I will definitely have lots of kick ass pictures this time around.

Maybe one day I’ll change this layout. I’m not sick of it yet. But something different might be nice.

Zoo trip

Last week we took Ethan to the zoo. It wasn’t a large zoo. It was pretty small, but it did have a few animals, a pony ride, a train ride (which Ethan loved) and a few other fun things for kids to do. I didn’t take many pictures, but did manage to get a few good ones in before we left.

Just before we left I saw this peacock walking around. Look how beautiful it is.

After he was done showing off he walked away.

Two toucans sitting on a branch. Not bad considering they were behind a glass window.

I tried to get a decent shot of Ethan sitting in this dinosaur egg. But he was too excited and couldn’t sit still for a second shot. So this is the first and only picture he allowed me to take. At least he roared like a dinosaur. Lol.

Anyway, next month we’re taking Ethan to the Bronx Zoo. I’m sure he’ll love it. And I’ll definitely have more pictures to post.

Wisdom teeth

I might be getting my wisdom teeth taken out today. I’m not sure. I might just back out at the last minute. I’m uh… scared. I hate going to the dentist as it is. Ugh!

Well, I should probably go get ready now. My appointment is at 1:00 PM. I just spent the past half hour looking up the procedure complete with photos and all. I guess I like to torture myself. Heh. I really don’t know what I was hoping to accomplish from that. Everyone tells me that it’s not that big of a deal, but I have to ask you… have you ever seen anyone immediately after they have had their wisdom teeth taken out? It looks like a big deal to me.

Yea… I’m so not going.

ETA - So my dentist pretty much rocks. I was brought to the office minutes after arriving. I was asked what I was there for and tried getting her to do the last cavity I have instead of the wisdom tooth extraction. She took a look at the wisdom tooth which was badly chipped. She then said “Oh no. This is coming out.” She numbed me up and left for a few moments. I sat there more nervous than I have ever been in my entire life. And this is coming from a woman who gave birth without an epidural. After I was numb she sat beside me in her nifty little stool and whipped out this metal instrument and started to screw? it into my tooth. She said “I hope this will only take a second.” I started to worry. I heard so many horror stories. I wanted to ask her what she meant by that, but I couldn’t speak. I kid you not… like five seconds later I saw her pull the wisdom tooth out of my mouth with that metal instrument. I was like “Wait… that’s IT?” She nodded. I was like “THAT"S IT?” I’m still in shock. She said next time she can take care of the other one which is also chipped, but not as bad as the one I no longer have.

Juan went to the pharmacy to get me some Advil and gauze. I hope like hell the Advil does the trick. I refuse to take anything stronger than over the counter medicine. I don’t even like to take that, but something tells me I will be needing it very soon.

I’m totally bringing my dentist some coffee the next time I see her. I think I love her.

Weekend trip

This weekend I went to Rhode Island to visit my family. At the last minute my aunt invited us to my cousin’s daughter’s baptism. So on Sunday we all went to church to see Jasmine get baptized. I took tons of pictures, but I don’t think my cousin would appreciate me posting pictures of her baby on my website for the whole world to see. But I did have Juan take a picture of me and Ethan. Something is better than nothing…

Afterward we all went to my aunt’s house for a little party.

As you can see, Ethan enjoyed himself very much. Lol.

It was fun. I’m glad I got to see my cousin’s daughter. I was so surprised when I found out she was pregnant. I was even more surprised when I saw that she was still abut 100 lbs just four months after giving birth. :sigh: I mean… how is that even possible??? Anyway, Jasmine is a little cutie pie. I hope we get to see her again soon.

I tried spending time with my mother and sister. Last time we visited was just before Christmas. My mother asked me to meet her in a Dunkin Donuts parking lot in the middle of a snow storm so that we could all exchange gifts. She claimed the stairs that lead to her apartment were covered in ice. She said it was too dangerous. This time around we met her in a Whole Foods parking lot. We took the kids (Ethan and just ONE of my nieces) to Mc Donalds for lunch and talked while the kids played and ate. I asked them straight out why we weren’t allowed to just visit them at their apartment. I told them there was no ice on the ground this time around. They said they were just embarrassed by their living situation. I told them I didn’t care what their place looked like and reminded them that I was there to see them not their place. They agreed to let us visit on Sunday after the baptism. While at the party my sister text messaged me around 2:00 PM and said she was at the hospital with my niece and said she didn’t know how long she was going to be there. I tried calling and texting all day and night and didn’t get a response. It was clearly another one of their excuses.

You know what? I’m done. I quit trying. Why should I keep going out of my way to see them when they won’t even allow me in their apartment? Instead I’m asked to meet them in various parking lots all over the state. My sister even had the audacity to tell me after the last visit that she felt like she was meeting up with a friend and not her sister. Gee… maybe that had something to do with the fact that we were asked to meet up in a friggin parking lot!

It’s cool though. I’m through trying to figure them two out. They obviously don’t care. I just need to let go.

Other than that it was a nice visit. We all had fun. That’s all that matters.

Updates

Asparagus Rolls: I got this recipe from a vegetarian cook book Juan’s cousin gave me. It’s great. All I did was take 4 sheets of phyllo pastry dough, cut it in half, wrap it around three asparagus spears and coated it with melted vegan butter. Then I baked it at 400° until golden brown; about 10 minutes. I used Annie’s Naturals Lemon And Chive Dressing as a dipping sauce. It was very tasty.

Oven-crisp Black Bean And Corn Flautas: I decided to try this recipe out a second time. This time I used lime. It was MUCH better.

No name for this. I just took some whole wheat tortillas, spread some original hummus on top, topped with baby spinach, lettuce, scallions and a slice of meatless smoked chicken. This was also very good.

Vegan Chocolate Chip Cookies: I finally did it! I got the recipe from Vegan With A Vengeance. They were so good! The only thing I didn’t like was that they turned out somewhat greasy/oily. But they didn’t come out flat this time around. They were moist and chewy and tasted exactly like a chocolate chip cookie is supposed to taste. I even baked vegan peanut butter cookies, but the photo I took doesn’t do them much justice. They were so good though. The guys ended up eating them all. So they must have been good. I got the recipe for those here.

Well, that’s about it for now. I’ve been having fun making vegan meals and desserts… most of the time.

By the way… I have officially been a vegetarian for a month and a half now. And the past two weeks I have gone without dairy and egg. The first month I still used dairy and egg. But now I read labels and make sure not to buy/use products that contain dairy and egg.
